KETERKAITAN ANTARA PATI, PROTEIN, DAN KEAMANAN PANGAN DALAM KONTEKS KETAHANAN PANGAN GLOBAL BERDASARKAN ANALISIS BIBLIOMETRIK

Penelitian ini bertujuan untuk memetakan lanskap penelitian global mengenai keterkaitan antara ketahanan pangan, pati, efek, kualitas, protein, dan keamanan pangan melalui pendekatan analisis bibliometrik kuantitatif berbasis data Scopus dan dianalisis menggunakan Bibliometrix (R-Studio) serta VOSviewer guna mengidentifikasi evolusi tematik, tren publikasi, dan jaringan kolaborasi ilmiah. Hasil menunjukkan peningkatan publiksi yang signifikan sejak tahun 2018 hingga 2025, dengan pergeseran fokus penelitian dari kajian deskriptif menuju pendekatan integratif yang menghubungkan aspek kimia pangan, bioteknologi, dan keamanan pangan berkelanjutan. Pati dan protein teridentifikasi sebagai simpul riset utama, sementara munculnya tema seperti teknologi, challenge, dan food industry menunjukkan pergeseran menuju riset aplikatif yang mengedepankan inovasi teknologi pangan modern. Hasil ini menegaskan bahwa interaksi antara komponen biopolimer, kualitas, dan keamanan pangan memiliki peranan penting dalam memperkuat ketahanan pangan global, memberikan dasar strategis untuk pengembangan sistem pangan yang aman, bergizi, dan berkelanjutan.
